  • Origin Based on the popular, classic confectionery and well-known liqueur, MONIN Butterscotch syrup was originally developed to satisfy demand in Australia. A nostalgic taste of a traditional sweetmeat, MONIN Butterscotch delivers a moreish sweet buttery flavour. Butterscotch’s primary blend of butter and brown sugar is sometimes combined with cream, sugar, salt and vanilla and is often used in the form of a sauce or syrup as a dessert topping and in biscuits and cakes. Its name derives from the fact that it must be ‘scotched’ or cut into squares before hardening. First made in Doncaster in the UK, Parkinson’s Butterscotch is thought to be the original, dating back to 1817. It was advertised as “Royal Doncaster Butterscotch” and “The Queen’s Sweetmeat”, as it is by appointment to the Royal household. Perfect as a dreamy ice cream sundae topping, MONIN Butterscotch syrup will also create sumptuous hot and cold dessert drinksColour Clear colour with yellow glints.Tasting notes Nose: Buttery and caramel Attack: Creamy with butterscotch candy flavour Length in Mouth: Long lasting buttery tasteBeverage Innovation Directors tips One of my favourite uses is to mix it with MONIN Almond syrup in a whipped cream preparation. The berries grow on shrubs on peaty moors and highlands such as the French Alps. • Origin Developed to offer a non-alcoholic version of rum-based drinks, MONIN Caribbean bottles a taste of the favourite tipple of pirates, buccaneers and British Royal Navy sailors, who still have a tot of rum presented on special occasions. A distilled alcoholic beverage made from sugarcane by-products such as molasses, rum is largely produced in the Caribbean and Latin America. Thought to be derived from the words ‘rumbullion’ and ‘rumbustion’, which were slang terms for ‘tumult’ or ‘uproar’, they bring to mind rum’s colourful associations with fractious men fighting in island tippling houses. Other names for rum include ‘Nelson’s blood’, ‘kill-devil’, ‘demon water’, ‘pirate’s drink’, ‘navy neaters’ and ‘Barbados water’! Today rum is used to flavour cakes, ice cream and fruits, which are macerated in rum. The nose of Caribbean rum aged in oak barrels and the sweet rum taste with notes of fruit of MONIN Caribbean syrup will create ‘rumbustious’ coffees, non-alcoholic cocktails and dessert drinksColour Bright amber.Tasting notes Nose of Caribbean rum aged in oak barrel; sweet rum taste with notes of fruits and vanilla.Beverage Innovation Directors tips The blend hints of island spices with a smooth texture stands out of the flavour and leads to an overwhelming spiced honey flavour that gently guides you to the creamy, cake frosting finish. “Caribbean” will give you the opportunity to convert all your rum-based alcoholic cocktails to their non alcoholic versions without even losing the rum aroma.Applications

  • OriginOne of the top-picks from the dessert trolley, Cheesecake has been around for centuries dating as far back as the Ancient Greeks! Several versions of it were conceived during the course of history.  However, the recipe which has transformed it into a modern-day dessert icon comes from the United States, or more specifically New York, where they first discovered cream cheese.Composed of a crunchy, buttery biscuit base and layered with an unctuous, creamy mixture based on soft cheese, cheesecake can simply be enjoyed plain in the New York style or topped off with fruit or sauce.  The creamy texture melts into an irresistible sweet and salty flavour combination. With MONIN Cheesecake syrup, you can enjoy this gourmet pudding flavour in your coffee and dessert drinks any time!Colour Light YellowTasting notes Nose: Freshly baked biscuit Attack: Balanced combination of biscuit and cream cheese Length in mouth: Salty hints Beverage Innovation Directors tips MONIN Cheesecake syrup is savoury and buttery which makes milk applications smooth and well rounded. • Origin Cherry Blossom is the symbol of traditional Japanese values - transitory beauty, purity and simplicity. With MONIN’s newest flavour, Cherry Blossom syrup, you have the opportunity to celebrate the arrival of spring, one of the most important Japanese events. The cherry blossom season is relatively short as the blossoms are falling from the trees after the blooming peak which shows the brevity of the human life and of its beauty, too. You can experience the intensity of this new flavour as they do in Japan, where the Cherry Blossom is memorable due to the famous spring event O-Hanami, a friendly and traditional gathering under the cherry blossom trees to appreciate the sight of the flowers.Colour Subtle light pink colour.Tasting notes Delicate floral perfume.Beverage Innovation Director's Tip To keep the original taste, don't mix it with too many ingredients. • Origin A classic cocktail flavour, MONIN Chocolate syrup delivers the comforting, luxurious taste of chocolate, enjoyed by civilisation for thousands of years. The origins of chocolate can be traced back over four thousand years ago to 1900 BC. Evidence exists of chocolate beverages, representing wisdom and fertility, being made from fermented, roasted and ground cacao beans in Central America. The Maya and Aztec civilisations held chocolate in high esteem, serving chocolate drinks at ceremonial occasions and using it as a kind of tax. Only more recently did Europeans add sugar, milk and cocoa butter to create the chocolate bars and sweets that we know today. Throughout history chocolate has been regarded as a luxury, lending itself well to cocktails and speciality hot drinks. Revisit classic cocktails with MONIN Chocolate syrup and create indulgent chocolate martinis and negronis, as well as soothing hot drinks.Colour Clear brown colour with gold glints.Tasting notes Cacao beans smell, cacao liqueur taste.Tips MONIN Chocolate syrup has a strong cocoa taste. The top-selling beverage in the world, coffee is the favourite brew which gets the day started and shapes our daily rhythm with 'the coffee break' and the 'after-dinner coffee'. It is made from roasted coffee beans, from the coffee plant. The earliest credible evidence of coffee consumption appears in the mid-15th century in Arabia in Mokha, Yemen when coffee beans were first roasted and brewed. It then spread throughout the Middle East and later to Europe via Italy. Coffee can be consumed in wide variety of ways from 'espresso' to 'cappuccino' and it is used as a flavour in cakes and puddings. Coffee and walnut cake and tiramisu are stock favourites and coffee is generally wonderful married with chocolate, nuts and vanilla. Developped to create Café Frappé drinks, MONIN Coffee syrup will impart the taste of brewed coffee with after-notes of Columbian coffee to dessert drinks, lattes and cocktails.

  • Origin The tart flavour of cranberry is the base for many classic cocktails such as the ‘Cosmopolitan’ and the ‘Americano’. The fruit of a low shrub or trailing vine, the cranberry favours acidic, boggy soil and cooler climates. Native Americans were the first to eat cranberries, so-called because the flower resembles the neck, head and bill of a crane. The USA and Canada are now the main cranberry producers. Famed for their acidic, sweet flavour and pretty colour, cranberries are harvested in late Autumn. They have become a festive flavour associated with Thanksgiving and Christmas , when cranberry sauce is traditionally eaten as an accompaniment to roast turkey. Around 95% of cranberries are made into juice, sauce or sweetened dried cranberries.
